RICOTTA PIE 
5 eggs
3/4 c. sugar
1/4 tsp. salt
2 tbsp. shortening (Spry/Crisco)
1 lb. Ricotta cheese
1 tsp. lemon extract
1 tsp. baking powder

Mix 1st 4 ingredients thoroughly; add last 3 ingredients; mix thoroughly (preferably with electric mixer). Pour into 9 inch unbaked pie crust. Bake in moderate oven (350 degree) for 1 hour or until knife comes out clean.

May be frosted with glaze made with 10X sugar, milk and lemon extract; topped with whipped cream, OR, brush top of pie with beaten egg white and sprinkle with a little granulated sugar before baking.
