DIETERS DELIGHT SCHEZUAN CHICKEN 
1 lb. chicken breast, skinned
1 c. green pepper, chopped
1 c. scallions, chopped
1 lg. onion, sliced
1 1/2 stalks celery, diced
1/2 c. Schezuan sauce
Weight Watchers butter spray
1/4 lb. steamed Cantonese egg noodles
1 1/2 c. uncooked rice
1/3 c. parsley

Prepare rice. In large skillet or wok sprayed with butter spray saute green peppers, scallions, onions, and celery. Cook 2 to 4 minutes. Stir occasionally. Remove from wok. Spray wok again with butter spray, add chicken cut into bite size pieces, cook 3 to 5 minutes. Add steamed egg noodles, parsley and Schezuan sauce. Add peppers, scallions, onions and celery mixture. Mix. Serve over rice. Use rest of sauce as desired. Serves 3.
