FRIED WONTONS 
1 lb. fresh wonton wrappers
3/4 lb. ground pork or hamburger
2 oz. canned water chestnuts (drained and chopped finely)
2 tsp. light soy sauce
1 tsp. cornstarch
1 tsp. salt
1 tsp. sugar

Mix ground pork or hamburger, water chestnuts, soy sauce, cornstarch, salt and sugar thoroughly.

Place a small spoonful of the mixture into each wonton wrapper. Gather the four corners together; then run the fingers from the tips down to the filling. Pinch together above the filling then flare the corners outwards.

Heat the deep oil to moderately hot and add several wontons. Fry to a light golden brown (about 2 minutes). Drain. Serve with dip.

SWEET AND SOUR SAUCE:

1/2 c. ketchup
3 tbsp. brown sugar
1/4 c. red wine vinegar or apple cider vinegar
1 tsp. cornstarch
1 tsp. cinnamon
Dash nutmeg and cloves

Mix all ingredients in a saucepan and bring to boil. Simmer about 2 minutes.

This recipe is excellent. Instead of water chestnuts, I used finely chopped celery. They are perfect and tasty without the sauce, and even better with it!
