POTATO WEDGES 
6 potatoes, washed and cut into wedges
3 tbsp. oil
Dash salt/pepper
1/2 tsp. oregano, dried
1/2 tsp. thyme, dried
Dash cayenne pepper
1/3 c. Parmesan cheese
1/3 c. Cheddar cheese, grated

Preheat oven 425 degrees. Boil potatoes in salted water 5-10 minutes, then pat dry.

Lightly grease baking sheet. Spread potatoes on baking sheet. Sprinkle spices and herbs over potatoes. Bake 15 minutes.

Sprinkle cheese over potatoes. Bake another 10-15 minutes until cheese melt or potatoes are done.
