SETH'S SUGARFREE BANANA WALNUT
CAKE
 
2/3 c. mashed bananas
1/2 c. corn oil butter
3 lg. eggs
3/4 c. water
2 c. white flour, plain
2 tsp. baking powder
1 tsp. baking soda
1/8 tsp. salt
1 tsp. cinnamon
1 c. chopped pecans

In a mixing bowl beat together mashed bananas and butter until creamy. Add eggs and water. Beat well. Mix and stir in flour, baking powder, baking soda and cinnamon. Beat until smooth.

Spread batter evenly in 9 x 13 inch pan, oiled and floured. Bake at 350 degrees for 20 minutes or until and floured. Bake at 350 degrees for 20 minutes or until knife inserted comes out clean. Cool and cut into squares. Serves 8 to 10. Can be baked in tube pan about 45 minutes.
