BANANA - WALNUT BUNDT CAKE 
Made in a Bundt pan, banana bread becomes a cake that is so delicious, it doesn't need frosting.

3/4 c. shortening or butter-flavor shortening
3 c. all-purpose flour
2 1/2 c. sugar
2 c. mashed ripe bananas (about 4 lg. bananas)
1/4 c. plain low-fat yogurt
1 tbsp. baking powder
1 tsp. vanilla extract
1/2 tsp. salt
1/2 tsp. baking soda
4 lg. eggs
8 oz. can (2 c.) walnuts, chopped
Confectioners' sugar

Preheat oven to 350°F. Grease and flour 10 inch bundt pan.

In large bowl, with mixer at low speed, beat sugar and shortening until just blended. Add flour and remaining ingredients, except walnuts and confectioners' sugar; beat until well mixed, constantly scraping bowl with rubber spatula. Increase speed to high; beat 2 minutes, occasionally scraping bowl. Stir in walnuts. Spoon batter into bundt pan.

Bake 65 to 70 minutes until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack 10 minutes; remove from pan. Cool completely on rack. Sprinkle cake with confectioners' sugar.

Makes 16 servings.

This is a very good recipe. I chopped up the walnuts pretty fine because I don't like big chunks in my cakes. I also used vanilla lowfat yogurt. I also made a glaze for the cake instead of just the powdered sugar.

I made this cake on a cold snowy day. I used black walnuts but other than that followed the recipe . I think when I make it again I will add some apple sauce to make it a little more moist. It had wonderful flavor especially with the black walnuts.

I thought this could use some spicing up.

I used a full cup of softened butter.

I used three cups of sugar.

I used 5 medium sized over ripe bananas

I didn't have plain yogurt, so I threw in a 6 oz chobani greek strawberry banana yogurt cup.

I used a few sprinkles of clove, a couple teaspoons of cinnamon, and a teaspoon of nutmeg. I also about a tablespoon of dried orange peel.

I made a glaze for the cake using a stick of butter (melted), a cup of confectioners sugar, and a few tablespoons of lemon juice.

My response has been great. Everyone loves this cake. I will use this recipe again and feel I have made it my own.
