MICROWAVE DELUXE RICE 
2 tbsp. butter
1 c. onion, chopped
1 1/2 c. instant rice, minute
1/2 tsp. salt
1 1/2 c. water
1 (10 oz.) pkg. frozen chopped spinach, thawed & drained
1 c. Colby cheese, shredded
1 (10 3/4 oz.) can cream of mushroom soup
1/4 tsp. hot sauce

In 2 quart casserole, combine butter and onion. Microwave at High 2 to 3 minutes until onion is transparent. Add rice, salt and water. Cover. Microwave at High 3 to 4 minutes. Let stand, covered, 5 minutes. Add spinach, cheese, soup and hot sauce; mix well. Microwave at Medium (5) 5 to 7 minutes, until heated through; stir after 3 minutes. Let stand, covered 5 minutes before serving.

Total Microwave Cooking Time 10 to 14 minutes. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
