PEACHES AND CREAM CHEESE CAKE #2 | |
3/4 c. all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 3 1/4 oz. pkg. dry vanilla pudding (not instant) 3 tbsp. butter (softened) 1 lg. egg 1/2 c. milk Combine in bowl, beat 2 minutes at medium speed. Pour into greased 9-inch deep dish or 10-inch pie pan (grease bottom and sides of pan). 1 (8 oz.) pkg. cream cheese (softened) 1/2 c. sugar (or 5 pkgs. sweetener) 3-5 tsp. peach juice Place fruit on batter. Combine remaining ingredients in small bowl and beat 2 minutes. Spoon on top of peaches and batter 1 inch from edge. Combine 1 tablespoon sugar (or 2 packages sweetener) with 1 teaspoon cinnamon; sprinkle over mixture. Bake until crust is golden brown, filling will appear soft. Cool and refrigerate. Better when served cold. |
