GAZPACHO SALAD 
1 med. tomato, seeded & chopped (1 c.)
1/2 c. diced, seeded & peeled cucumber
1/4 c. chopped green pepper
2 scallions, sliced
2 tbsp. vinegar
1/4 tsp. salt
Dash of pepper
1 pkg. lemon flavor Jello (sugar free or regular)
3/4 c. boiling water
1/2 c. cold water
Ice cubes

Combine first 7 ingredients. Set aside. Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin, stir until slightly thickened. Remove any unmelted ice. Add vegetable mixture. Chill until thickened, about 5 minutes. Pour into individual dishes. Chill, soft set in 30 minutes. Garnish with vegetables. Serves 6.
