1 cucumber, diced
1/4 c. onion, diced
1 avocado, diced
1 tomato, remove skin and dice
3/4 c. lemon juice
1 tbsp. salt
2 tbsp. salad oil
4 tsp. wine vinegar
3 c. V-8 juice

Mix all ingredients together and serve chilled.
