GAZPACHO (COLD VEGETABLE SOUP) 
lg. tomatoes, peeled
1 lg. cucumber, peeled
1 med. onions
1 green pepper
1 pimento, drained, optional
2 cloves garlic
24 oz. tomato juice
1/4 c. olive oil
1/3 c. red wine vinegar
1/4 tsp. Tabasco
1 1/2 tsp. salt
1/8 tsp. pepper

Blend 1 tomato, 1/2 cucumber, 1/2 onion, 1/2 pepper, pimento and 1/2 cup tomato juice, oil, vinegar, Tabasco, salt and pepper. Mix and chill. Just before serving add the rest of the vegetables, which have been chopped.
