EASY VEGETABLE SOUP 
1 lg. onion, diced
3/4 c. carrots, diced
3/4 c. celery, diced
1/2 head cabbage, chopped
1 (46 oz.) can tomato juice or 6 c. tomatoes
2 c. water
6 beef bouillon cubes
1 bay leaf

Combine all ingredients into large kettle and cook 2-3 hours.
