REFRESHING CHICKEN SALAD 
4-5 c. diced, cooked white chicken
1 c. chopped celery
1/2 c. sliced, pitted ripe olives
2 tbsp. grated onion (fresh green)
1 (15 oz.) can pineapple chunks
1 (11 oz.) can mandarin oranges, drained
1 1/2 c. green seedless grapes, halved
1 c. Miracle Whip salad dressing
1 tbsp. prepared mustard
1 (5 oz.) can chow mein noodles or 1 c. cashew nuts
Crisp lettuce leaves

Combine chicken, celery, oranges, pineapple, olives, onion, and grapes in a large bowl. Blend salad dressing and mustard; toss gently with chicken mixture. Cover and chill several hours. Toss nuts or chow mein noodles into salad just before serving on crisp lettuce leaves. Serve with muffins or dinner rolls.
