CHOCOLATE CHIP BANANA MUFFINS 
1/2 c. butter
3/4 c. sugar
2 eggs
1 tsp. vanilla extract
1 c. ripe bananas, mashed
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
3/4 c. semi-sweet chocolate chips

Cream together the butter and sugar in a large bowl. Add the eggs, one at a time, beating after each. Add the vanilla and mashed bananas. In a separate bowl, combine the flour, baking soda, salt and chocolate chips. Add to the creamed mixture and stir until just blended; the batter will be lumpy. Pour into greased muffin tins and bake in a 350 degree oven for 25 minutes. Makes 12 muffins.
