EGGPLANT CASSEROLE | |
1 med. eggplant 2 tbsp. melted butter 1 c. cracker crumbs 1 c. ham, diced 1 well beaten egg 1/8 tsp. pepper Pare eggplant and cut into 1 inch cubes. Cook in boiling water until just soft. Drain. Add the butter, 1/2 cup cracker crumbs, ham, egg and pepper. Put into greased casserole and cover with remaining 1/2 cup cracker crumbs. Bake at 350 degrees for 20 minutes. |
