SHISHKABOB 
1 lb. lamb, cut into chunks and trim visible fat

Marinate lamb chunks 3-4 hours in a mixture of: 2 tbsp. lemon juice 1/4 tsp. basil 1/4 tsp. marjoram 1/4 tsp. rosemary 1/4 tsp. dried mint 1/8 tsp. pepper 1 clove garlic, minced

Skewer meat separately or with green pepper, onions, potatoes, pineapple, mushrooms, tomatoes (vegetable, fruit, and meat chunks should be about the same size. Precook onions and potatoes.) Cook about 4 inches from coal 15-20 minutes turning occasionally, or until meat is barely pink on the inside. Serves 4 (335 calories per serving).
