CABBAGE CASSEROLE 
8 c. chopped cabbage
1 1/2 c. onion rings
4 bread slices, cubed
1 lb. pork sausage, cooked and drained
2 tsp. butter
2 tsp. flour
1/8 tsp. pepper
1/2 c. milk
Velveeta cheese

Parboil cabbage and onions for 7 minutes; drain. Make a white sauce with butter, flour, milk, and pepper. Add 1/2 pound cheese, cubed. Stir until sauce is smooth. Layer half of cabbage mixture, bread, and sausage in a 1 1/2-quart casserole dish.

Repeat layers of cabbage mixture and bread. Top with sauce and remaining sausage. Bake in a 350 degree oven for 30 minutes. Top with additional cheese and continue baking until cheese is melted.
