HOLUBTSI (STUFFED CABBAGE OR
LITTLE PIGEONS)
 
Remove core from large cabbage, put cabbage in boiling water. Remove leaves as they become soft enough to bend. Cut off top of hard center. Fill, roll and tuck in ends. Put in casserole or roaster which bottom has been lined with discarded leaves, sliced onion and celery. Put sauce into cover Holubtsi. Bake at 350 degrees for 1 1/2 to 2 hours covered.

FILLING:

2 lbs. ground beef
1 lb. ground pork
2 eggs
2 c. cooked rice (can e instant)
1 med. size onion, grated
Salt and pepper to taste
2 (10 oz.) Hunts tomato sauce

If you need more sauce to cover add the water from the cabbage or 1 (10 1/2 oz.) can tomato soup and 3 cans of cabbage water or regular water can be used.

Combine all ingredients except the tomato sauce together. Sauce is poured on top of Holubtsi to cover. Put on lid.

Can use a 6 quart Dutch oven on top of stove instead of casserole. Simmer for 1 hour to 1 1/2 hours or until done.
