CHEESE BREAD 
1/4 lb. goat cheese
1/4 lb. ricotta cheese
1/4 lb. grated Mozzarella
1 clove garlic, smashed
French bread
Marinated tomatoes (may be purchased from Conte-Phillips or other specialty food stores)

Food process all of the above until well blended. Slice any kind of French bread and spread the above on one side. (I normally use the Pepperidge Farms French bread.)

Place on a cookie sheet that has first been lined with foil, then spread with the oil from marinated tomatoes. Place bread on tray and top with a piece of a marinated tomato on each piece of bread. Bake in a 350 degree oven until lightly browned.

This cheese mixture refrigerates well for a long time so it may be something you want to keep made up.
