APPLE RAISIN MUFFINS 
2 med. sized tart apples, peeled, cored and coarsely chopped
1/2 c. sugar blended with 1 tsp. cinnamon

Sprinkle chopped apples with sugar/cinnamon mixture. Set aside.

Mix in large bowl:

1 c. all purpose flour
1 c. whole wheat flour
1 tbsp. brown sugar
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon

Mix in medium bowl:

2 eggs, beaten
1 c. skim milk
1/2 c. vegetable oil
1/4 c. baking molasses
1 c. seedless raisins

Preheat oven to 400 degrees.

Blend all dry ingredients well in large bowl. Blend liquid ingredients separately. Slowly stir liquid ingredients into dry ingredients. Fold in raisins, mix well.

Fold in chopped apple mixture. Spoon into well greased muffin tins about 3/4 full. Bake about 20 minutes or until toothpick inserted in center comes out clean. Makes about 2 dozen medium sized muffins.
