CHUNKY APPLE PECAN CAKE 
3 c. all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 c. vegetable oil
1/2 c. unsalted butter, melted
2 c. dark brown sugar, packed
3 lg. eggs
2 tsp. vanilla extract
3 c. cubed (3/4 inch) pared tart apples
1 1/2 c. pecan halves
1 c. golden raisins

Heat oven to 350 degrees. Butter and flour 10-inch tube or bundt pan. Sift flour, cinnamon, baking soda, and salt together. Beat oil, butter, sugar, eggs, and vanilla in large mixing bowl until creamy. Stir in dry ingredients. Batter will be very thick. Fold in apples, pecans, and raisins. Spoon into prepared pan and smooth top.

Bake until wooden pick inserted in center comes out clean, about 1 1/4 hours. Let cool completely in pan. Invert onto platter and cut into wedges. Serves 14.
