TART APPLE SALAD 
1 (20 oz.) can crushed pineapple
6 med. size tart red apples
2 c. miniature marshmallows
3 ribs celery
3/4 c. mayonnaise
1/2 tsp. ground nutmeg
3/4 tsp. ground cinnamon
1/4 tsp. ground ginger
2 tsp. orange extract
1/2 tsp. almond extract
2 tsp. lemon juice
1 tsp. salt
2 tbsp. brown sugar
1 tbsp. granulated sugar
1 (3 oz.) pkg. chopped pecans

Drain pineapple while washing apples. Stir marshmallows into drained pineapple; set aside. Dice apples and celery into bowl containing pineapple juice to retard discoloration. For dressing, mix well mayonnaise and all remaining ingredients except nuts. Drain juice from apples and celery and combine with pineapple and marshmallows. Add dressing and mix well. Stir in nuts. Makes 8 cups.
