ORANGE GLAZED PORK CHOPS 
4 pork chops, lean & 3/4" thick
Flour
1 tbsp. vegetable oil
Ginger & pepper

ORANGE SAUCE:

1/2 c. orange juice
2 tbsp. orange marmalade
2 tbsp. brown sugar
1 tbsp. vinegar

Sprinkle chops with ginger and pepper. Dredge with flour (this makes a nice brown crust). Brown chops in oil on both sides. Combine sauce ingredients and pour over chops. Cover and reduce heat and simmer 45 minutes to 1 hour. NOTE: The sauce cooks down and thickens from the marmalade. Watch carefully and turn chops from time to time. Serve in sauce, spoon extra over chops.
