SWEET POTATOES AND APPLES 
5 med. apples
5 med. sweet potatoes
1/2 c. butter
1 c. sugar
1 c. hot water
2 tbsp. lemon juice
1 tsp. cinnamon

Boil sweet potatoes and cut into thick slices. Core apples and slice thickly. Place layer of potatoes in baking dish. Dot with butter and sprinkle with sugar; add a layer of apples. Continue alternating layers until all ingredients are used. Pour hot water over mixture; add lemon juice. Bake at 375 degrees for 30 minutes. Yield 8-10 servings.

MICROWAVE VARIATION SWEET POTATOES AND APPLES:

Use 2 cans Lucks fried apples and 1 can southern yams. Place in microwave safe dish with the butter, sugar and juice from sweet potatoes. Microwave on full power for 7 minutes. Remove, stir and return to microwave for another 8 minutes on high.

Since microwave ovens vary in power, you may need to adjust your cooking time.
