SWEET POTATO SOUFFLE 
4 lbs. sweet potatoes (canned or fresh), mashed
1 c. sugar
2 eggs
3/4 stick butter, softened
1 c. milk
1/8 tsp. nutmeg
1/2 tsp. cinnamon
3/4 stick butter
1/2 c. brown sugar
1/2 c. chopped pecans
3/4 c. crushed corn flakes

Mash potatoes with electric mixer. Remove strings from mixer blades and mix again. Remove any additional strings and then mix in other ingredients (sugar, eggs, 3/4 stick butter, milk, nutmeg, and cinnamon). Pour into baking dish. Bake 30 to 40 minutes at 300 degrees and then add topping and bake for 15 minutes more (time will depend on how deep or shallow the baking dish is).

Topping: Melt 3/4 stick butter and brown sugar. Add nuts and corn flakes. Spread over souffle and continue last cooking.
