HEALTHY POPPY SEED MUFFINS 
1/2 c. butter
1 c. sugar
2 eggs
1 c. plain yogurt
2 c. flour (I use whole wheat)
3 tsp. poppy seeds
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla

Cream butter and sugar. Beat in eggs one at a time. Beat in yogurt and vanilla. Stir in flour mixture.

Spoon in muffin pan. Bake at 400 degrees for 20 minutes. Makes 12 muffins.
