HEALTHY EGG SANDWICH 
1 English muffin (I use Thomas' Whole Wheat)
1 egg
1 tbsp. skim milk
1 oz. goat's milk feta cheese
1 slice of tomato
1 cup arugula

Toast English muffin. While English muffin is toasting, whisk egg and milk together. Put into a small microwavable dish and cook in microwave for one minute. After English muffin is toasted, spread cheese across one half. Place egg, tomato, and arugula on top. Season with salt and pepper before enjoying.
