EGG PUFF SANDWICH 
2 egg yolks (plus 1 for brushing on pastry)
3 oz. grated cheese
1 egg white
salt, pepper and cayenne
1/4 cup (1/2 stick) butter
puff pastry

Preheat oven to 375°F.

Roll the puff pastry out thinly and cut in half.

Beat the eggs, add cheese and melted butter and seasoning. Place mixture on one piece of pastry and cover with the other. Cut in rounds with pastry cutter.

Brush with beaten egg and bake in hot oven for 10 or 15 minutes.
