EGG IN THE BASKET (AKA EGG IN
THE HOLE) SANDWICH
 
2 eggs
2 slices of white or wheat bread
1-2 slices of American cheese
Canadian Bacon, Sausage or Bacon (to taste)
Butter, to taste
salt and pepper, to taste

Put holes in the center of bread slices, preferably with a biscuit cutter, but a small-diameter (about 2") glass will suffice. Set aside.

Heat skillet on medium heat. Add butter (I said butter to taste, as I use more than most to really soak into the bread for a crispy, rich flavor).

After butter is melted, immediately add bread slices. Immediately add fresh-cracked egg (separately) into the holes of each bread slice. Flip each slice after 2-3 minutes on the first side, assuming a runnier yolk is desired (preferred for this recipe). Cook 2nd side for about 2 minutes. Set aside, keep warm.

Next, prepare meat of choice. NOTE: Heat breakfast meat of choice in the pan remnants if precooked, otherwise cook raw meat first and use dripping for preparing the bread and eggs, forgoing butter.

Add meat to bottom bread slice, add cheese and top with 2nd bread slice.

Makes one sandwich.
