SOUTHWESTERN BEEF AND BEANS 
1 lb. dried pinto beans
6 c. cold water
1/2 lb. diced salt pork
1 lb. lean chuck steak, cut into 1-inch cubes
1/2 tsp. crushed red chili pepper flakes
1 med. chopped onion
2 cloves minced garlic
1 (6 oz.) can tomato paste
1 1/2 tbsp. chili powder
1 tsp. salt
1 tsp. cumin seed
1/2 tsp. crushed marjoram leaves

Soak beans in water overnight, drain and rinse well. Brown salt pork in skillet and place in crock pot. Add soaked beans, water and remaining ingredients. Cover and cook on low 9 to 10 hours. Serve with Spanish rolls.
