SHOE PEG CORN CASSEROLE 
1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. chopped bell pepper
1/2 c. grated Cheddar cheese
1 can shoe peg corn
1 can French style green beans, drained
1 can cream of celery soup

TOPPING:

1/2 pt. sour cream
1 stick butter
1 stack of Ritz crackers
1/2 c. slivered almonds

Mix together the first 8 ingredients and add salt and pepper to taste. Place in 9 x 13 inch casserole dish. Melt butter and mix with crushed Ritz crackers, spread on top of vegetable mix. Sprinkle with almonds. Bake at 350 degrees for 45 minutes. Serves 12 to 15 people.
