SWEET SHOE-PEG-CORN CASSEROLE 
1 med. onion, chopped (at least 1/2 cup)
1/4 c. bell pepper, chopped
1/2 c. chopped celery
1 can shoe peg corn (12 oz.)
1 can French green beans, drained (16 oz.)
1/4 c. cheese, grated
1/2 pt. sour cream (8 oz.)
1 can cream of celery soup
Salt and pepper, to taste

TOPPING:

1 stick butter, melted
1 stick (roll) Ritz crackers, crushed (about 36)

Mix all ingredients except butter and Ritz crackers. Turn into casserole dish. Mix butter and Ritz crackers (crumbs) and spread over casserole. Bake at 350 degrees for 30 to 35 minutes. Serves 6.
