BANANA CAKE | |
2/3 c. shortening 2 1/2 c. sifted cake flour (2 c. minus 2 tbsp. all-purpose flour) 1 2/3 c. sugar 1 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/4 c. mashed bananas (3) 2/3 c. buttermilk 1/2 c. eggs (2 lg.) 2/3 c. chopped walnuts Stir in shortening just to soften. Sift in dry ingredients. Add bananas and 1/2 of buttermilk. Mix until flour is damp. Then beat 2 minutes. Add rest of buttermilk and eggs. Beat 2 minutes. Fold in nuts. Bake at 350 degrees for 30-35 minutes in 9x13 pan. FROSTING: 1/4 c. shortening 1/4 c. butter 1/2 c. sugar 1/2 tsp. vanilla 6 tbsp. milk Beat 5 minutes. Double recipe for layer cake. Use 3/4 cup milk. |
