BAKED RICE AND CHEESE 
2 eggs
1 tbsp. melted butter
1 1/2 c. milk
1 tsp. salt
Few grains pepper
2 c. cooked rice
1 c. grated American cheese

Beat eggs slightly, add butter, milk, salt, pepper, rice and 3/4 cup of cheese and blend. Pour into a greased baking dish and sprinkle the remaining cheese on top. Set in a shallow pan of hot water and bake in a 350 degree oven about 45 minutes or until set. This will make 5 or 6 servings.
