TOMATO CHEESE TORTA 
1 tbsp. butter
1 tbsp. vegetable oil
1/2 med. onion, chopped
1 clove garlic, chopped
1 sm. zucchini, chopped
1 1/4 c. fresh bread crumbs, 2 slices
1/4 tsp. oregano
3/4 tsp. basil, divided
2 tbsp. melted butter
2 eggs, beaten, divided
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. crumbled feta cheese
2 c. shredded Swiss cheese (8 oz.)

In medium skillet heat 1 tablespoon butter or oil until hot. Add onion and garlic; saute until limp, stir zucchini and tomatoes, cook 6 minutes more. Drain and let cool while making crust.

In small bowl combine bread crumbs, 1/2 teaspoon each oregano and basil, melted butter, and 2 tablespoon beaten egg mixture. Toss with fork to combine. Mixture will be moist. Pat evenly in a 9 or 10 inch deep dish or quiche pan. Toss remaining egg mix and spices with vegetable mixture. Layer ingredients on crust, 1/3 vegetable, 1/3 feta cheese, 1/3 Swiss cheese, and top ending with Swiss cheese. Bake at 350 degrees for 40 minutes. Let stand 10 minutes. Makes 6-8 side dish servings.
