CHEESE TOPPED ZUCCHINI SQUASH | |
3 med. zucchini squash 1 tbsp. salad oil 8 oz. tomato sauce 8 oz. sliced Mozzarella cheese 1 med. onion, thickly sliced 1/2 - 1 tsp. crushed oregano Saute onion in oil. Cut squash in half lengthwise. Add squash, cut side up. Sprinkle with salt and pepper. Sprinkle on oregano; pour in tomato sauce. Cover and cook about 10 minutes in skillet or until squash is tender. Top with cheese slices. Sprinkle with oregano if desired. |
