CHEESE ZUCCHINI SQUASH 
8 to 10 med. zucchini
1/2 c. butter
1/2 c. grated Cheddar cheese
1/2 c. Greuyer Cheese, or other white cheese
1/4 c. grated Parmesan cheese
1 c. sour cream
1/4 c. chopped chives
1/2 tsp. salt
1 c. breadcrumbs
Paprika as needed

Wash zucchini, put in pan with a little water and parboil. Do not cook too long! Cut off ends, and cut lengthwise. Scoop small hollow in each half, and arrange on cookie sheet.

Mix cheeses together with sour cream, chives and salt; spread on each zucchini. Drizzle melted butter on tops, sprinkle with bread crumbs and a dash or paprika. Bake 45 minutes at 300 degrees.
