ZUCCHINI AND CHEESE BAKE 
4 med. zucchini
1/3 c. chopped onion
1 tbsp. butter
1 c. shredded Cheddar cheese
Dash of pepper
3/4 c. chopped tomato
4 crisply cooked bacon slices, crumbled
1/4 tsp. salt

Trim ends of zucchini. Cook, covered in boiling salted water 5-8 minutes. Drain. Cut in half lengthwise. Scoop out centers. Saute onion in butter. Stir in chopped zucchini and remaining ingredients. Fill shells; place in 11 3/4 x 7 1/2 inch baking dish. Bake at 350 degrees for 25-30 minutes or until lightly browned.
