SHRIMP CREOLE D' AIMEE 
4 lbs. cleaned and deveined shrimp
3 Tbsps. flour
4 Tbsps. butter or cooking oil
1 chopped onion
1/2 cup chopped bell pepper
3 chopped garlic cloves
1 small can tomato sauce or whole tomatoes or tomato paste
Tony Chachere seasoned salt
1/2 tsp. cayenne pepper
Dash of thyme
Chopped green onions and parsley
5 cups water

Melt butter or oil in pot. Add all chopped vegetables. Saute 20 minutes and add seasoning. Stir well. Add tomato sauce and flour. Cook about 30 minutes. Add water. Adjust seasoning. Cook 1 hour. Drop in shrimp and bring to a boil and cook 15 minutes. Add parsley and green onions. Turn fire off. Serve hot over rice. Serves 8-10.
