SHRIMP CREOLE 
1 lb. cleaned raw shrimp
1/3 c. vegetable shortening
1/4 c. flour
3/4 c. hot water
1/2 c. green onions, chopped
2 cloves garlic, crushed
1/2 c. chopped parsley
1 slice fresh lemon
Accent
1/2 tsp. Old Bay seafood seasoning
1/4 c. chopped green pepper
1/2 tsp. thyme
Dash cayenne pepper
1 (8 oz.) can tomato sauce
2 c. cooked rice

Melt shortening; blend flour and stir constantly until browned. Add remaining ingredients except rice. Simmer 20 minutes. Remove bay leaves and lemon slice. Serve over hot rice. Serves 6.
