CREOLE SHRIMP AND RICE | |
4 tbsp. bacon drippings or butter 2 tbsp. flour 2 sm. onions, chopped 1 c. chopped celery 1/2 green pepper, chopped 2 c. cleaned shrimp, raw or boiled 2 c. tomato pulp 2 c. diced okra 1 clove garlic, minced 1 tsp. salt 1/8 tsp. pepper 2 c. water, more if desired 1 bay leaf Let flour brown slightly in fat, then add the onion, celery, and the pepper. As these begin to brown add the remaining ingredients. Bring to a boil and simmer for 45 minutes. Serve over fluffy steamed rice. |
