SHRIMP CREOLE 
1 med. onion, chopped
1/2 c. green pepper, chopped
1/2 c. shallots, chopped
1/4 c. celery, chopped
5 cloves garlic, chopped
1/4 c. fresh parsley, chopped
2 whole bay leaves
1/2 tsp. minced oregano
1 tbsp. minced thyme paste
2 (16 oz.) cans tomato paste
2 (16 oz.) cans tomato sauce
1 1/2 lb. okra
3 lb. shrimp, peeled and washed

Cut and saute okra in vegetable oil until it does not stick to pan. Set aside. Saute all seasonings until tender. Add tomato paste. Saute slowly, stirring occasionally, for about 45 minutes. Add bay leaves, thyme, tomato sauce, okra and shrimp. Salt and pepper to taste.

After cooking about 20-25 minutes on low fire, add 1 (16 oz.) can water or two if do not want too thick. Serve on cooked rice.
