GROUND MEAT CASSEROLE 
1 lb. ground beef
4 or 5 medium potatoes
1 small onion
8 oz. frozen mixed vegetables, or 1 can mixed vegetables
1 can crushed tomatoes
1 small can tomato sauce
1 can vegetable soup

Spray Dutch oven or casserole dish with non-stick cooking spray. Crumble ground beef in bottom, then slice potatoes in 1/4 inch slices and spread over ground beef. Chop onions and sprinkle on top of potatoes. Add mixed vegetables. In a bowl, mix tomatoes, tomato sauce and vegetable soup. Stir and pour over all ingredients in Dutch oven.

Bake at 375 or 400°F until potatoes are tender. If casserole starts to get dry, add a little water to finish baking.
