ONION CASSEROLE 
3 sm. white onions per person
Saltine crackers
White cream sauce for 6

Slowly melt 2 tablespoons butter. Add 2 tablespoons flour and blend in. Do not brown. Add 2 cups milk. Salt and pepper to taste. Peel small white onions and boil in salted water until tender. Drain and place in a greased baking dish. Pour white cream sauce over the onions. Crumble crackers on top and dot with butter. Bake for about 30 minutes at 325 degrees. Casserole is even better if made the day before.
