RICE & CHEESE CASSEROLE 
2 c. cooked rice
2 c. milk
2 eggs
1 1/2 c. grated sharp cheese
Salt & pepper
Variations: pimento, cut up olives, mushrooms

Beat eggs in large bowl. Add hot milk to eggs a little at a time, while stirring constantly. Add rice and grated cheese, salt and pepper and choice of variation. Pour into greased 1 1/2 quart casserole. Bake at 325 degrees until knife inserted in center comes out clean (1 to 1 1/2 hours).
