YUMMY BAKED CHICKEN | |
1 whole chicken (3-4 lbs) 1-2 onions, thinly sliced salt and pepper, for sprinkling garlic powder, for sprinkling paprika, for sprinkling 2-3 tablespoons butter, softened 1 teaspoon soy sauce (optional) 3 large potatoes, peeled, cut in 1-inch cubes olive oil spray Dab chicken with dots of softened butter; rub butter into chicken. Sprinkle chicken lightly and evenly with salt, pepper, garlic powder and paprika. Arrange onions to cover bottom of foil lined baking dish. Place chicken on top of onions and potatoes. Spray chicken and potatoes with olive oil. Sprinkle with soy sauce. Cover lightly with foil. Bake 1 hour at 350°F. Chicken should read 160°F at breast on instant read thermometer. Larger chickens take longer to cook, smaller chickens cook in less time. Remove foil during last 15 minutes of cooking to allow browning. Serves 4. |
