ORANGE CHEESECAKE 
3 tbsp. crushed graham crackers
2/3 c. boiling water
1 pkg. sugar-free orange gelatin
1 c. lo-fat cottage cheese
1 (8 oz.) fat-free cream cheese
2 c. fat-free whipped topping

Spray a 9-inch pie pan with nonstick cooking spray. Sprinkle on the graham cracker crumbs. Dissolve gelatin in boiling water, stirring well. Let it cool, then put gelatin, cottage cheese and cream cheese in blender. Blend on medium. Pour into a large bowl and fold in whipped topping. Pour into prepared pie pan. Smooth over top and refrigerate. Garnish with peeled orange slices. Delicious!
