TWICE BAKED FLUFFY BAKED
POTATOES
 
4 med. potatoes
Oil or fat
Salt & pepper to taste
2 lg. potatoes, boiled
1/2 c. sour cream
1/2 c. butter
3 tbsp. minced onion
1 tbsp. snipped parsley
1 c. grated cheddar cheese

Scrub potatoes dry. Coat with oil; wrap in foil. Bake at 350 degrees for 1 hour and 30 minutes. Halve lengthwise; scoop out insides. Salt and pepper shells. Mash boiled potatoes with pulp of baked potatoes; beat in sour cream and butter until fluffy. Season; stir in onion and parsley. Stuff shells; sprinkle with cheese. Return to oven; bake until hot. Serve. Yield: 8 servings.
