NO BAKE PEANUT BUTTER OATMEAL
COOKIES
 
2 c. sugar
1 stick butter
1/2 c. milk
3 c. quick oatmeal
3/4 c. peanut butter

In a medium saucepan mix together sugar, butter and milk. Heat to boiling. Let boil 1 1/2 minutes. Remove pan from heat and add oatmeal and peanut butter. Stir thoroughly and drop by teaspoonfuls onto waxed paper and cool.

Great recipe. I substituted the sugar with 1 1/4 cup honey, used vanilla almond milk instead of milk, and used a low fat olive based butter substitute. VERY GOOD. It tastes like peanut butter cookie dough. HEAVEN!

Hello ladies, the recipes sounds yummy, I am going to try these out. I am going to add cinnamon, maybe allspice, nuts, (chopped well), regular Old Fashioned oats are better than quick oats, and anyone out there needing to cut out all the fat, any recipe you can, and do use half the butter that it is called for. Happy eating.......

Yummy! I used about 1 cup brown sugar and 1/2 stick of butter and a bit of applesauce, however they are a bit soft and crumbly, which is delicious but not easy to eat. So, I'll probably skip the applesauce next time and maybe use more butter to help bind everything together. I just put them into a glass baking dish and cut them into pieces to eat. Tasty treat when I'm breastfeeding in the middle of the night!

I used 1 cup of Splenda brown sugar mix to replace the 2 cups of sugar and used 1 cup of natural peanut butter and used NO butter.. I added two tbsp. ground cinnamon and 1 tsp. vanilla extract.. I used a square baking pan rather then plop them on wax paper.. Put in fridge to cool and set.. And wow, so yum!

This was a great quick cookie for the kids.. I also cut down on the sugar, we added chocolate chips and rolled ours in grahams cracker crumbs.. They were great!

I also used brown sugar instead of white, as was previously suggested. What a difference! They're not overwhelmingly sweet now. Ty for the idea! I also had to add almost one extra cup of oats (I didn't measure anything over three cups but kept adding more until the mixture no longer looked quite so wet.) there was no way they would have held together otherwise. Maybe because I only buy skim milk? Or I didn't boil long enough? I'm a huge fan of the brown sugar idea now, thanks! My grandmother made these when I was a wee little one but I never thought mine would taste better!
