HOPPIN JOHN BLACK-EYE PEAS 
It has no definite amounts, you start with peas. Soak overnight or 3 hours in the morning (8 cups water for 1 pound peas).

Add 1 tablespoon vinegar for each cup of peas. 1 can stewed tomatoes (cut up) 1 chopped onion 1-2 stalks celery, diced Salt, pepper and garlic to taste Basil, bay leaf if desired
